Chorizo Chives Omelette


Spanish chorizo (cured sausage) and chives omelette for a perfect Friday brunch



Spanish chorizo gives the smoky flavor while the chives hints mild garlicky taste

Here is how to make Chorizo Chives Omelette

INGREDIENTS:

  • Spanish chorizo, or cured sausage into julienne cut
  • Chives, minced
  • Eggs, beat in a bowl

PROCEDURE:

  1. Heat some olive oil in a skillet pan. In medium heat, throw in the chorizo until it renders some of its fat, you can see the oil gets the red color from the sausage. Set aside.
  2. In the same pan, pour the beaten eggs and swirl the pan so the egg covers it. Sprinkle all the chives and add back the chorizo.
  3. Fold the omelette to wrap and turn off heat. Serve immediately with toasted bread.
