Here is how to make Chorizo Chives Omelette
INGREDIENTS:
- Spanish chorizo, or cured sausage into julienne cut
- Chives, minced
- Eggs, beat in a bowl
PROCEDURE:
- Heat some olive oil in a skillet pan. In medium heat, throw in the chorizo until it renders some of its fat, you can see the oil gets the red color from the sausage. Set aside.
- In the same pan, pour the beaten eggs and swirl the pan so the egg covers it. Sprinkle all the chives and add back the chorizo.
- Fold the omelette to wrap and turn off heat. Serve immediately with toasted bread.
